What features should you consider before purchasing a commercial-grade oven?

Commercial ovens are designed for the pressures and workloads they will encounter in commercial kitchens. The production of food in a commercial kitchen is not possible with domestic appliances because of the amount of use and volume of food needing to be cooked.

There are a couple of options available to you:

Oven Ranges: These have an oven space on the inside that is primarily for cooking meats or pastries. On the top, they have a set of electric and gas hobs. Your range’s size will dictate the number of burners and hobs. In some larger models, the middle burner is equipped with a griddle. Dual-function models allow you to bake, fry or boil at the same. It is the same as what can be done in your home stove and oven, but at a much larger scale.

Convection Ovens: These are ideal for small kitchens that lack the space required to accommodate a large oven. The fan inside the oven helps distribute heat more evenly. The ovens have lower temperatures and cooking times, which can help reduce shrinkage.

Combination ovens combine steam and fan-assisted cooking. There are potato ovens for cooking large amounts of jacket potatoes, and keeping them warm during service.
